Tahini is an ingredient found in hummus, *baba gahnouj, and I have recently discovered it can be used in a whole host of dishes, including soups, baked goods, and cookies. It is available at most health food stores, or places like Sprouts, but it is so easy to make if you have a good blender.
There is one thing I would like to say about making tahini. I have made it with oil and without. It is easier to make with oil. If you choose to make it without, add small amounts of water as you go. The goal texture is for it to be thick, but it should slowly pour out of the container. It might look a little grainy.
Tahini
INGREDIENTS
| 1 2/3 | cups sesame seeds |
| 2 | Tbls water |
INSTRUCTIONS
| 1. | Preheat oven to 350. Toast sesame seeds for 5-10 minutes, tossing the seeds frequently with a spatula. Do not allow to brown. Cool for 20 minutes. |
| 2. | Pour sesame seeds into food processor and water. Blend for 2 minutes. Check for consistency. The goal is a thick, yet pour-able texture. Add more water and blend until desired consistency.
*Baba Gahnouj is similar to hummus, but made with egg plant instead of chick peas. |
